Sharing My Love for Sun Basket

My husband and I usually take turns with regards to cooking dinners.  On the few nights per week that I work late, I am usually home right before 9pm and by that time I am way too tired to try and figure out what to throw together.

What we found was happening though was that we were basically making the same meals over and over and as you can imagine eventually you just get tired of a certain dish.  One of my friends had posted about how she was using Sun Basket and we decided to give it a try!

Here are a few things I love about this meal delivery service:

The main reason why Mike and I really love Sun Basket is because it has become a fun thing that we can do together.  Instead of just one of of us cooking, we both participate and we find ourselves having great conversations and enjoying some wine while Everly is already tucked away in bed.  I might cut up all the veggies while he is preparing the meat and vice versa.  The flavor combinations they come up with are definitely nothing we could come up with on our own and sometimes we look at some of the ingredients and wonder if we will even enjoy the flavor...but once it's all combined, you see why the chef chose each specific ingredient. The flavors are so vibrant and fresh, it has opened our eyes to new flavors and ingredients we may have brushed off in the past.  It's been fun exploring a new menu each week. We look forward to our Sun Basket nights because we know the meal is for sure going to taste good and we spent quality time with each other learning how to make a new dish.

If you followed any of my posts before little Miss Everly came along, then you would know that I have been on a little hiatus from blogging...

On June 21, 2016, Everly Alessandra was born and now my world literally revolves around keeping her happy and healthy! I love love being a mom!

My time is limited these days and quite honestly I have enjoyed the break from work and online coaching so that I could fully dedicate my time and energy to my little girl...after all, she is the cutest baby ever (yes, yes, I am biased)

Although sooooo much has changed in our household, many things are still the same.

I am still committed to maintaining a healthy lifestyle for myself and for Everly. I am doing my at home workouts at my current fitness level (which is much less than when I started out pre-pregnancy) and I have cleaned up my eating habits once again. Currently, I am exactly at my pre-pregnancy weight but I am more focused on getting muscle tone back, I feel like I lost a lot of muscle tone during pregnancy and as soon as I started "deflating" as I like to call it, I could tell I had way more jiggle than usual. But I am not putting any harsh deadlines on myself, it took basically 10 months to grow our little Princess inside my body so one cannot expect the body to go right back to what it was before pregnancy.  I have been setting monthly fitness goals for myself and have been measuring my progress via before and after pictures as well as how my clothes are fitting. The scale can be deceiving and does not always show your true progress especially if you start putting on more muscle mass.

I admit that I gave in to indulgences way more than usual while I was pregnant simply because I had the attitude of "well, I am a preggo lady right now so might as well enjoy." So while the days of eating cupcakes or treats at night are now behind me, it was hard that first week of giving up the extra sugar.  Although I am happy to report that my pregnancy cravings have disappeared (tacos, sugary treats and even chocolate).  I am not following any specific "diet" because I don't feel that "diets" work.  Eating healthy has to be a way of life, period. I am not saying that I eat healthy 100% of the time, no freakin way, I enjoy cheat meals here and there...just not EVERYDAY. I try my best to choose lean meats and veggies especially for dinner. Now more than ever it is super important for me to stay as hydrated as possible since I am currently breastfeeding Everly. Lots of water equals an adequate milk supply.

I will get back to posting my favorite recipes, workouts, and of course now that I am a new mom, anything that I think will be helpful to other new parents too! Given that I am a first time mom here, I am in no way an expert, but I always feel that it is our duty to share information and experiences with each other so that we can all live happy healthy lives!

Pregnancy Must Haves

I am still in shock that I only have 7 weeks left of Pregnancy! Time has just flown by for me during this pregnancy, and in just a few short weeks we will finally get to meet our little Princess and we couldn't be more excited.  I haven't blogged much about my pregnancy but have definitely kept people updated about via my Instagram and Facebook page.  So here I am with my Pregnancy Must Haves! 


I am fortunate that I was blessed with an awesome and what I consider pretty easy going pregnancy.  There are definitely a few items that have been crucial on this journey and I wanted to share my pregnancy must haves list with other Preggo Moms.  Sharing is caring and I am always looking for new and better ways to live my life so I hope this post helps a few fellow Mamas-to-be. 

1. Comfortable Leggings: Need I say more? Early on in your pregnancy, this is not as critical, but even into your 2nd trimester when your waist line starts slowing expanding; you will appreciate comfortable stretchy pants. I DID NOT spend a lot of money on leggings; in fact, my favorite pair of Leggings came from Target and were under $20! I purchased 2 more pairs from my local boutique store, the leggings are not name brand by any means and they were both $8 each! I prefer the leggings that are high waisted and have the panel to pull over your baby bump.  For me personally it creates a comfortable support feeling and without that I feel uncomfortable.  Now that I am 8.5 months pregnant, these leggings are my best friend!





2. Water Bottle : Hydration is important before, during and after pregnancy...period! But I found out the hard way during pregnancy just how important it really was.  Aim to be drinking at least half your body weight (in ounces) daily! The days I slacked off on my hydration, I got massive migraine headaches and just felt lethargic and terrible all day.  Once I made the connection, I made sure to always have my big 32 oz water bottle with me, day and night and thankfully headaches have not been an issue since! Your body is working so hard during this time, and both you and the baby need plenty of fluids to feel great during your pregnancy. 



3. Prenatal Vitamins: You know that you must take Prenatal Vitamins during your pregnancy, your OB and your pregnant friends will all recommend a good vitamin to take during this time. I chose this Rainbow Light brand based on its reviews, the ingredients and the fact that I never felt nauseous or constipated after taking them.  Since I have a very sensitive stomach, these were perfect for me as I never got a stomach ache or had tummy troubles after taking them. They have worked well for me.  I also added an additional Fish Oil supplement since this particular vitamin did not include that.  Oceans MOM Prenatal DHA supplies over 100% of the recommended DHA level for pregnancy in one small, pleasant-tasting, strawberry-flavored soft gel, providing a broad range of benefits.



4. Maternity Jeans: After searching high and low and reading close to a million Pins on Pinterest about the very best maternity jeans, I found the perfect ones for me! The best part is that they were under $40 and worth every penny! I bought a black and dark grey pair because I happen to love dark colors, plus black is very slimming! My favorite jeans were found at H & M, The MAMA Super Skinny Jeans are washed stretch denim with ultra-slim legs. Mock pockets at front and regular pockets at back. Wide ribbing at waist for added comfort.  My advice to you is to go into the store and try on each pair! I found that the different colors fit differently therefore I ended up with 2 different sizes of the same exact style but I chose the fit was most comfortable.  Looking back now, I probably should have also bought blue jeans, but my pregnancy wardrobe has managed just fine without them! 



If you happen to live in warmer climates like I do, I also got a 1 pair of maternity shorts for those very hot days from Destination Maternity.  Again, these shorts are super cute, have the comfy belly panel and were under $40 dollars! 



5. Comfortable Bra: I am not the type to wear under wire bras anyway, but now more than ever, I could NOT imagine having to wear a rigid uncomfortable bra during pregnancy.  As the months went by, my rib cage seemed more and more compressed, it gets harder to breathe as the baby grows and if your bra is uncomfortable, I promise you that a few hours into your work shift; you are seriously contemplating ripping your bra off and throwing it in the trash! I found a really nice affordable bra at none other than Target.  The Beauty by Bali® Women's T-Shirt Wireless Bra has been my best friend ever since! 

6. Body Pillow: I am very fortunate that I have been able to use an awesome body pillow courtesy of my best friend who offered it to me early on in my pregnancy.  I love the one she let me borrow because it can be used as 1 big body pillow or you can un-velcro the pieces and use the parts separately.   I tend to use the bigger part of the pillow but let me tell you, as your pregnancy progresses and your belly needs more and more support, this pillow is a lifesaver.  Maybe you have a girlfriend that has one of these just lying around collecting dust now that she is no longer pregnant...never hurts to ask! 



7. Bio-Oil (Stretch Mark Prevention): I was given a bottle of Bio Oil when I was getting married at an event and remember thinking... "I don't need this now, but when I start having babies this will come in handy." I am so glad I saved the bottle! Per the instructions on the bottle, it says to start using the oil on your baby bump at least 2 times per day beginning in your 2nd trimester.  About Bio-Oil : Clinically proven and dermatologist recommended* for scars and stretch marks. Bio-Oil is also used to help improve the appearance of uneven skin tone, dry skin and aging skin. So far I have yet to see any stretch marks (fingers crossed) and while there is much debate over whether stretch marks are genetic etc, for me, it has been a fun little nightly routine to apply this oil to baby bump.  Every night, Mike watches me apply the oil and comments on how big our little girl is getting...it makes for cute moments before bedtime. 



8. Comfortable Affordable Staple Wardrobe Items: My husband was adamant about me being practical when it came to buying "maternity clothes." He kept saying, "It’s just for 9 months!" But I hate to waste money and we do have a household budget to maintain, so when planning my "maternity" purchases, I kept a few things in mind. Number one, I bought very stretchy t shirts that I could also wear even after I am not pregnant.  I found these cute super stretchy comfortable tops at local boutique stores for about $8 a piece.  So naturally I bought a few different colors to rotate thru and they have been almost like my pregnancy uniform. I also bought a few very stretchy long maxi dresses, again, in my pre-pregnancy size so that I can still wear them even once little Miss Everly is born! I also bought a few long stretchy skirts that could be pulled up over my baby bump simply for extra comfort. These too were under $15 each, all purchased in my pre-pregnancy size so that I can wear them after pregnancy as well.  Are you catching my theme here? Buy affordable staple items, colors that all match with each other and then rotate them around.








I will say though that I don't go thru as many outfits probably as the average working mom simply because I am a nurse who happens to work a regular Monday thru Friday schedule that equals 5 days that I am in nursing scrubs! (The perks of being a nurse) But on that note: if you are a nurse and need maternity scrubs, I highly recommend these yoga style pants as they can also be purchased in your pre-pregnancy size and used after as well.  I loved these Wonderwink scrub bottoms during my pregnancy! 

9. Belly Sports Bra: If you are an active mama and have been working out even before your pregnancy, you will most definitely appreciate having support for your growing baby bump! 
As your belly grows and gets heavier, just like your regular sports bra, your belly needs support as well. This belly sports bra is comfortable, cute and easy to wash! I am feeling much heavier these days in my final trimester and I could not imagine working out without support for my belly bump. 10. Pregnancy Apps: Of course as soon as you are pregnant, you run out and buy a few books about what to expect and books about newborns, but what I find myself using the most because of convenience is Pregnancy Apps on my phone! My 2 favorite apps so far have been:

Healthy Italian Zoodle Salad - No Pasta Needed!

Everyone loves a good potluck, but figuring out what dish to bring can be tricky sometimes.  I like to bring dishes that are healthy but also delicious.  This Italian Zoodle salad was perfect for our work potluck but was also great as leftovers for dinner for Mike and I.  As long as you have a spiralizer, this salad is easy to make and requires just a few ingredients.

Ingredients:

5 small zucchini
1 small red onion, sliced
Organic cherry tomatoes
1 green bell pepper, chopped
1 orange bell pepper, chopped
Small can of of black olives
12 oz. marinated artichoke hearts, drained


Directions:

Use your Spirooli to spiralize the zucchini.  Set aside in a rectangular pyrex or larger size bowl. Slice onions, halve the cherry tomatoes, chop the bell peppers into slices and add to zoodle salad.  Add entire can of black olives and artichoke hearts to zoodles as well and combine all ingredients. (note: the zucchini is not cooked for this recipe) Cover and refrigerate salad.  Add dressing once you are ready to serve the salad so it does not get soggy and all ingredients stay nice and crisp.  The flavors of all the ingredients go so well together, you really don't notice the fact that this salad is pasta less because of all the robust flavors.  I think any type of light vinaigrette or balsamic will be good for this salad, choose which works best for you!
